Pesto Cheese Bread

Bread or Dinner roll dough, thawed to room temperature
1 Tbsp butter, melted
1 tsp VE Pasta Seasoning
4 Tbsp prepared VE Pesto Herb Mix
1 cup grated mozzarella cheese
1/2 cup shredded fresh Parmesan cheese

1. Roll dough out on greased pizza pan.
2. Brush dough with butter then sprinkle on VE Pasta Seasoning.
3. Cover with dampened tea towel or plastic wrap and allow to rise for 30 minutes.
4. Remove covering and poke dough several times with a fingers, or a fork, to prevent bubbles from forming as it bakes.
5. Bake at 350 F for 10-12 minutes. Remove from oven and spread with prepared VE Pesto Herb Mix. Sprinkle cheeses on top Pesto.
6. Return to oven and bake for 10-12 minutes or until cheese is nicely melted.

Manicotti

2 cups ricotta or cottage cheese
1 cups grated Mozzarella
1/2 cups Parmesan
1 beaten egg
1 1/2 Tbsp VE Pasta Seasoning
8 Manicotti tubes, cooked
1 cup Tomato Sauce, divided
1/4 cup Parmesan Cheese

1. Preheat oven to 375F
2. Mix together cheeses, egg, and VE Pasta Seasoning.
3. Fill cooked Manicotti tubes with cheese filling.
4. Lightly grease a 9x13 baking pan. Cover bottom with Tomato Sauce.
5. Add filled Manicotti tubes, in a single layer, to pan and top with more Tomato sauce.
6. Top with Parmesan Cheese. Cover with foil.
7. Bake for 30 minutes then remove foil and bake for 10 more minutes.

Super Simple Pasta Salad

Even kids will eat this one!
Colored rotini pasta
1 stalk chopped celery
1/2 pepper chopped (Red or Green)
1 green onion chopped
1/2 cup mayonnaise
1/4 cup fresh Parmesan cheese
1 tsp VE Pasta Seasoning
1 tsp VE Herb and garlic
1 tsp VE 3 Onion Mix

1. Cook Pasta according to instructions on box.
2. Mix together remaining ingredients and mix into cooked pasta.

Bruschetta Chicken Bake

1 - 19 oz. can stewed tomatoes, undrained
1 pkg Stove Top Stuffing mix for chicken
2 tsp VE Minced Garlic
1 1/2 boneless, skinless chicken breasts, cut into bite size pieces
1 tsp VE Poultry Seasoning (or VE Pasta Seasoning)
1 cup grated mozzarella

1. Preheat oven to 400 F.
2. In medium bowl add tomatoes, stuffing mix and garlic. Stir until stuffing mix is moistened. Set aside.
3. Place chicken pieces into a 13x9 baking dish. Sprinkle with seasoning and cheese. Top with stuffing mixture.
4. Bake for 30 minutes, or until chicken is cooked through.

Warm Pizza Dip

1- 8 oz. container Whipped Cream Cheese
1 cup pizza sauce
1/2 cup chopped onion
8 oz. mozzarella cheese, grated
2 1/2 oz. pepperoni, coarsely chopped
2 1/2 oz. can sliced olives, drained
1 tsp VE Pizza Seasoning

1. Spread cream cheese on the bottom of a greased 9” round pie plate.
2. Add the remaining ingredients, in layers, in the order that they appear.
3. Sprinkle Pasta Seasoning over top. Place in preheated 350F oven for 5-10 minutes. Serve warm with crackers.

Simple Pasta Salad

Colored rotini pasta
1/2 pepper chopped (use red or yellow for added color)
1 stalk chopped celery
1 green onion chopped

Dressing:
1/2 cup mayonnaise
1 teaspoon VE Herb and garlic
1/4 cup fresh parmesan cheese
1 teaspoon VE 3 onion mix
1 teaspoon VE Pasta seasoning

1. Combine pasta, pepper, celery and onion. Set aside.
2. Combine ingredients for dressing. Add to pasta mixture; toss to combine. Chill before serving.

Crumb Topped Broccoli

2 lbs Broccoli
1 Tbsp butter or margarine
1/2 tsp VE Pasta Seasoning
1/4 cup dry breadcrumbs (+ more for sprinkling on top)
1 Tbsp Olive Oil
1 clove garlic, minced
1 1/2 cups diced sweet onion
3 Tbsp White Wine
3/4 tsp VE Chili Garlic Sea Salt
1/4 tsp VE Chipotle Chili Powder

1. Cook Broccoli until just tender, about 2-3 mins. Drain well & set aside.
2. Meanwhile, melt butter in fry pan, add Pasta Seasoning & crumbs, and cook until butter is absorbed and crumbs are lightly toasted. Remove and set aside.
3. In frying pan add oil, garlic and onions. Cook until browned and tender. Remove and set aside.
4. In same frying pan add wine, salt and Chipotle Chili Powder and cook 2 mins. Add broccoli stirring until heated through, about 3 mins. Add onions and garlic and cook 1 minute more. Transfer to serving dish and sprinkle with crumbs
